Chorizo and Egg Tacos

Ingredients
  

  • 1 tube ground chorizo
  • 4 eggs
  • 1 cup shredded cheese of choice
  • flour tortillas

Instructions
 

  • Place chorizo in a skillet over medium heat. Cook like you would cooking sausage stirring and breaking the meat into tiny pieces. Once fully cooked, remove chorizo from skillet with a slotted spoon.
  • Add eggs - crack eggs in same hot skillet and scramble with spatula, fully cooking the eggs. Once eggs are scrambled and cooked, add chorizo back to the skillet.
  • Add cheese - melt cheese with other ingredients in the skillet.
  • Assemble - add about ½ cup of the mixture to a taco shell and top with your favorite toppings!
