    Lasagna Soup Recipe without Tomato Paste

    Ingredients:

    • Garlic and onion - adds savory flavor.
    • Marinara sauce - the tomato taste and Italian flavor comes from the sauce and seasonings.
    • Beef broth - Adds liquid to make the soup.
    • Ground sausage - provides protein and flavor.
    • Lasagna noodles - what makes the lasagna soup, lasagna soup!
    • Ricotta and parmesan cheese - for the cheese topping.

    How to Make Lasagna Soup:

    • Brown meat - even if you make this in the crock pot, the meat still needs to be cooked a head of time.
    • Add liquids - the liquid is what makes the soup, soup. Add seasonings here too to flavor.
    • Let cook - simmer the flavors together for an amazing savory taste.
    • Add noodles - noodles should be added last so they do not over cook. Add noodles within the last 15 minutes of cooking. Some some noodles cook faster than others. The soup is done when the noodles are soft.

    Tips:

    • Add pasta at very end - we do not want the noodles simmering for a long time or they will absorb too much liquid.
    • Add toppings - no soup is complete without savory toppings. This recipe has an optional cheese mixture to put on top

    What is lasagna soup?

    Lasagna soup is a comforting soup that has the flavors of traditional lasagna, but served in soup form. No need to worry about layering!

    Can I make lasagna soup ahead of time?

    Yes, lasagna soup can be made ahead of time. You can prepare the soup up to a day in advance, allowing the flavors to marinate more in the fridge. Let the soup cool after cooking, then transfer it to an airtight container and refrigerate. When you're ready to serve, heat in a large pot over medium heat. You can heat smaller servings in the microwave as well.

    Can I freeze lasagna soup?

    Yes, lasagna soup with sausage can be frozen to eat at a later date. However, pasta tends to absorb liquid and fall apart when frozen and thawed. To prevent this, freeze the soup without the noodles. Place cooled soup without noodles in an air tight container. Freeze for up to 3 months. When ready to eat, thaw the soup in the refrigerator 24 hours before serving, reheat on the stove, and add cooked lasagna noodles.

    Variations:

    • Different meat - you can use ground beef, ground turkey, ground chicken, or even different flavors of sausage
    • Noodle shapes - any shape of noodles will work, just have to adjust the cook time. You can make this gluten-free by using gluten-free noodles.
    • Sauce - you can use crushed tomatoes and tomato paste instead of marinara sauce.

    How to Serve:

    Most soups taste amazing with a side of bread such as garlic bread, artisan bread, Hawaiian rolls, etc.

    How to Store:

    Let soup cool down to room temperature. Then store in an air tight container in the fridge for up to one week and the freezer for up until 3 months.

    How to Reheat:

    Any soup with pasta in it is best reheated in separate parts. Remove the noodles and warm up rest of soup mixture. Add noodles back in once rest of soup is hot. This will help the pasta from absorbing the moisture of the soup as it cooks.

    Ingredients
      

    Soup Ingredients

    • ½ cup chopped onion
    • 2 cloves minced garlic
    • 1 lbs italian pork sausage
    • 24 oz marinara sauce
    • 4 cups beef broth
    • 3 tablespoon italian seasoning
    • 4 uncooked lasagna noodles broken in bite sized pieces

    Cheese Topping

    • ½ cup ricotta cheese
    • ¼ cup parmesan cheese
    • salt and pepper to taste

    Instructions
     

    Stove top

    • In a large pot, begin frying the sausage, breaking it up as it cooks. Once mostly browned, add onion and garlic. Cook until onion is clear.
    • Pour in marinara sauce, broth, and seasoning. Bring mixture to a boil. Once boiling, turn down mixture to a simmer. Simmer for 25 minutes. Then add lasagna noodles and cook for about 10 minutes or until noodles are soft.

    Crock pot

    • In a large skillet, begin frying the sausage, breaking it up as it cooks. Once mostly browned, add onion and garlic. Cook until onion is clear. Dump into a sprayed crock pot. Pour in marinara sauce, broth, and seasoning. Cook on low for 4 hours. Within last half hour, add uncooked lasagna noodles.
    • During last 10 minutes, prepare ricotta mixture by combing the ricotta cheese, Parmesan cheese, salt, and pepper in a bowl.
    • To serve, ladle the hot soup into soup bowls. Top with a dollop of the ricotta mixture and mozzarella/parmesan cheese. Serve your delicious lasagna soup hot! Add crusty bread or a side salad for a balanced meal.
